I had an idea producing different flavored citrus extracts for baking (we grow our own citrus) - generally using alcohol extraction - so that would also need a processing license AND possibly OLCC?

I've used a recipe provided on the pectin container for plum jam. Not sure if this is a tested recipe. Is this legit? Also, can we vary the recipes for jam and reduce sugar, for instance?

Just to clarify for commercial kitchen licensing. As a husband and wife wanting to work in a rental commercial kitchen. My wife will do the baking and creating but I will be helping with packaging and dish duties. We each have to have a license paid for? So not only do we have to pay for a year license for two months up until the end of June then again for the next fiscal year but also each pay for our own licensing?
