Like many of my undocumented Paisanos, work was hard to come by for Laura Cruz until about 15 years ago, she was given an opportunity to work in a kitchen. Her culinary career has been spent in Beverly Hills and adjacent cities, at South Beverly Grill, Houston’s, The Peninsula Hotel, Spartina and the Waldorf Astoria where I became the Banquets & Events Sous Chef. During the pandemic, she sells food from home and the occasional pop up. She calls her food venture Del Alma, because it is from the heart that she cooks, and lives.
