Polcanes: A Fried Dish from Yucatán with Juan Chan, EK'BALAM
Polcanes is yet another Yucatecan snacks that you probably had not heard of. Its name comes from the union of the Mayan words “Pol”, meaning head, and “Can,” which means snake. Many years ago, this dish had an oval shape like the head of a snake. Chef Juan Chan of EK’BALAM, originally a catering business, will demonstrate how to prepare this traditional dish from his Montebello home-based pop-up.
